The Indian diaspora community in North Carolina has a new reason to celebrate with the renowned chef Narendra Singh having joined Saffron Indian Cuisine as executive chef. He is an award-winning Indian culinary specialist with over fifteen years of international experience spanning India, the Caribbean, Bermuda, and the United States.
Born in Uttarakhand and trained at the Doon Hotel Management & Tourism Institute in Dehradun, Singh brings a depth of authentic culinary knowledge that is rare even by global standards. His specialisation lies in North Indian curry cuisine — the rich, aromatic tradition of dishes like Butter Chicken, Lamb Shank, Jalfrezi, Dal Makhani, and Lamb Shahi Korma — prepared using traditional techniques, hand-ground spice blends and the kind of attention to detail that only comes from years of professional training and genuine passion for the craft.
After developing his foundational skills at ITC Royal Gardenia in Bangalore, he joined Carnival Cruise Lines in 2012, rising over six years from Demi Chef de Partie to Chef de Partie, earning multiple Star Employee of the Month awards along the way.
His subsequent seven years at Thomas United Company Ltd in Bermuda further broadened his profile, giving him the independence to run an Indian kitchen entirely on his own terms — managing menus, operations, quality standards and guest satisfaction without a larger hotel brigade to fall back on.
He says his approach is straightforward: stay true to the authentic flavours of India without compromising on ingredient quality. “It must be ensured that every guest leaves with the kind of dining memory that only great food can create,” he observes.
