People switch to other options as vegetables become costlier

With the prices of staple vegetables rising considerably, people are switching to other options. Many vegetable vendors claimed that with an increase in the prices of vegetables, the kitchen budget of households is under a tight squeeze. Apart from this, the markets are witnessing some changes in the habits of consumers. People said that instead of consuming high-priced vegetables, they have shifted to other options like soybean, pulses and khichdi.

A vegetable seller said, “Due to the heavy rain, the price of many vegetables has increased. Not all can afford high-priced vegetables. People have changed or reduced their consumption of such vegetables.”

Local resident Puja Sharma said, “I have increased the consumption of pulses as compared to the vegetables. We cook vegetables once a week considering the high prices.” Instead of buying tomatoes I bought small tomato puree pouches, she added.

Prices of the vegetables like tomato, onion and capsicum have increased along with ginger.

Another local Bindu Walia said, “The hike in the prices of vegetables has forced me to shift to other options. Instead of consuming the vegetables I have shifted to soybean, pulses and khichdi. Apart from this, ginger is an essential ingredient in most vegetarian dishes. With its price soaring, I have started using small sachets of ginger and garlic paste.”
