Chef Harpal to turn Karigari into destination restaurant

Chef and television personality Harpal Singh Sokhi expressed his ambition to transform the Karigari restaurant in Dehradun into a destination restaurant or legacy restaurant. He said this while hosting a Live Culinary Masterclass at his restaurant, Karigari here on Sunday.
The event was attended by food enthusiasts, media representatives and guests for an immersive experience rooted in Indian flavours, memories and street food culture. The masterclass was designed as an interactive session where chef Sokhi cooked live alongside selected participants, sharing stories behind each dish and demonstrating techniques that blend tradition with modern presentation.
The menu showcased his personal food journey across India, featuring dishes such as Deena Nath ki Tamatar Chaat, inspired by Deenanath Maharaj of Banaras and the timeless flavours of the Varanasi ghats, as well as Kulchey Chole Pakodey Pockets, drawn from his childhood memories of street food enjoyed with his father in the bustling lanes of Ludhiana, among others.
Speaking about the masterclass, Sokhi stated, “For me, food is not just about recipes; it is about people, places and memories. This masterclass in Dehradun was an opportunity to bring those stories to the table, from Banaras to Punjab and to cook with the audience, honouring the Karigaris of India in our kitchens and celebrating regional cuisines. When people cook together, food becomes a celebration.”
